For the second year in a row we have on the Nomad menu with this very special batch from the Ngororero washing station, Rwanda, where the coffees usually give a wide range of exceptional flavors in the cup such as berries, citrus fruits, sweet tomatoes and caramel flavors .
Established as one of the most stable countries in the region, its economy grows by 7-8% each year and the production of specialty coffees plays a fundamental role in this growth. Through the importer Sucafina, at Nomad we feel that we are doing our part to help improve and grow sustainability and good coffee practices in the Ngororero region. Sucafina Rwanda, in collaboration with the Kahawatu Foundation, invests significantly in yield improvements, farmer training, quality improvement projects, environmental sustainability and other initiatives to increase the livelihoods of local farmers.
With this particular lot we have collaborated with $2.53/kg that has been allocated for a project to purchase, care and manage pigs for producers in Rwanda. This means that they have extra income during the year thanks to the sale of these pigs.
Process
After purchasing cherries from producers, Ngororero subjects the cherries to a strict selection process. First, the washing station staff removes any lower quality cherries by flotation. Specially trained personnel then visually inspect the remaining cherries for visual defects.
After sorting, the cherries are shelled with a Pinhalense sheller that removes up to 80% of the mucilage before fermentation. The parchment is then fermented for 10 hours before being placed to dry in the sun on raised beds. While drying, the parchment will be screened regularly to remove imperfections and sifted to ensure even drying.
